Holiday Stuffing Rice
I love stuffing and I love holiday rice dishes but a lot of times they have meat in them (when other people make them) so I can’t eat them. But this year, I was inspired when RightRice released their new Holiday Stuffing flavor and decided to take matters into my own hands.
If you’re not familiar with RightRice, it’s basically a rice made from veggies so that it has fewer carbs and more protein than white rice. It only takes 15 minutes to make, which allows this dish to be whipped up in about 30 minutes (that’s less time than it usually takes just to cook regular rice)! The new Holiday Stuffing is flavored with thyme, rosemary, and onion, and even tastes great on its own, but it’s even better in this recipe. Hope you try it for yourself this holiday season!
Ingredients (6 servings):
2 bags Holiday Stuffing RightRice
1 tbsp avocado oil
1 medium yellow onion, diced
1 cup celery (about 2 stalks), diced
1 cup carrots (about 2 carrots), diced
3 garlic cloves, minced
10 oz. mixed mushrooms, sliced
1 tbsp sage, chopped
1 tbsp thyme, chopped
1 tbsp rosemary, chopped
Salt
1 tbsp butter
1 apple, cubed
Pomegranate seeds or pecans, for topping (optional)
Directions:
Bring a medium pot of water to a boil and cook RightRice according to package.
In the meantime, heat avocado oil in a large pot and add onion, celery, carrots, and saute until tender, about 8 minutes.
Then add garlic, mushrooms, sage, thyme, rosemary, salt, and cook for another 6-8 minutes. Turn off heat.
Add cooked RightRice, butter, and apple to pot. Mix everything together.
Top with pomegranate seeds or pecans for a crunch before serving. Enjoy!
