Peaches & Cream Baked Oatmeal
Oatmeal is hands-down one of my ultimate comfort foods. I mean…I did only eat oatmeal every morning for seven, maybe eight, years straight. As the years went on, I started experimenting with different ways to get my oatmeal fix and came across baked oatmeal, which practically tastes like dessert! Not only is it healthy, it’s also extremely filling and usually keeps me full all morning long.
My secret to taking baked oatmeal to the next level is canned peaches. I love using canned peaches since you can get them year-round and they make the oatmeal extra delicious, comforting and convenient. I try to go grocery shopping as little as possible these days so I’ve been stocking up on canned foods, which are easy to use, shelf-stable, and a great addition to some of my favorite comfort-food recipes. It literally tastes like peach cobbler and reminds me of summer whenever I eat it.
The best part about baked oatmeal is that it’ll last up to a week in the fridge so all you have to do is add some milk and heat it up in the morning. I love having a warm breakfast to start my day and this is a great option for a busy schedule because I don’t always have time to cook every morning. Try it for yourself to see what I mean!
Ingredients (6-8 servings):
3 cups old fashioned oats
1/2 cup brown sugar (I use coconut sugar)
1/2 tbsp cinnamon
1.5 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
2 eggs, whisked
1 ripe banana, mashed
1.5 cups milk (I use almond milk)
1/4 cup butter or coconut oil, melted and cooled
1 can sliced peaches, save some for topping
Walnut pieces, save some for topping
Directions:
In a large bowl, add oats, sugar, cinnamon, baking powder, salt, and stir together
In a medium bowl, add eggs, banana, milk, butter, vanilla extract, and mix well
Pour wet ingredients into large bowl and combine everything
Gently mix in half canned peaches and walnut pieces
Pour mixture into greased 11x7 or 9x9 pan
Top with remaining peaches and walnut pieces
Bake at 350º F for 30-35 minutes
Serve with warm milk and any additional toppings like cinnamon, coconut flakes, etc.
